It is not fixed. The referee decides based on what happens during play. Some matches add only 2 minutes. Others add 7 or more. The estimator above lets you pick a level so you can plan for a range.
Halftime is not part of the 90 minutes. It is an extra 15 minutes in most adult leagues. For a 7:00 PM kickoff, the second half starts around 7:50 PM, not 7:45.
VAR checks can add several minutes. In tournaments that use VAR heavily, stoppage time often lands between 5 and 9 minutes. The estimator includes a VAR buffer option for this reason.
Only knockout matches that are tied after regulation go to extra time. League matches end after stoppage time. Make sure you know the competition format before planning.
